Description

A refreshing, protein-packed salad made with creamy avocado, fiber-rich chickpeas, and crunchy vegetables. This quick and nutritious bowl is perfect for a light meal or a side dish, providing a balance of healthy fats, fiber, and plant-based protein.


Ingredients

Scale
  • ½ cup boiled chickpeas

  • ½ medium avocado, diced

  • ¼ cup cucumber, chopped

  • ¼ cup cherry tomatoes, halved

  • 2 tbsp red onion, finely chopped

  • ½ tsp olive oil

  • 1 tsp lemon juice

  • Salt & pepper to taste

  • Fresh coriander chopped


Instructions

  1. In a bowl, mix the boiled chickpeas, diced avocado, cucumber, cherry tomatoes, and red onion.

  2. Drizzle with olive oil and lemon juice.

  3. Season with salt and pepper to taste.

  4. Garnish with fresh coriander.

  5. Mix well and serve fresh!
