Description

Three-bean salad is a classic dish that combines the hearty textures and flavors of different beans with a tangy dressing, creating a refreshing and nutritious side dish or light meal. This salad is not only delicious but also packed with protein, fiber, and essential nutrients.


Ingredients

Scale
  • 1/2 cup kidney beans, boiled, drained and rinsed
  • 1/2 cup  chickpeas, boiled  drained and rinsed
  • 1/2 cup  lobia (Black eyed beans) ,  boiled, drained and rinsed
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh coriander leaves
  • 1/2 cucumber chopped
  • 1 tsp olive oil
  • 1 tsp. cup apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the kidney beans, chickpeas, Kala chana, chopped onion, and coriander leaves.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until well combined.
  3. Pour the dressing over the bean mixture and toss until everything is evenly coated.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve chilled and enjoy!
