Ingredients

  1. 1 cup mashed sweet potato
  2. ½ cup almond butter or any nut/seed butter
  3. 2 eggs (or flax eggs for vegan option: 2 tbsp flaxseed meal + 5 tbsp water)
  4. ¼ cup unsweetened cocoa powder
  5. ½ tsp baking soda
  6. ½ tsp vanilla extract
  7. ½ tsp cinnamon (optional)
  8. ¼ tsp salt
  9. 1/4th cup choco chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a small baking dish (8×8 inch) with parchment paper.
  2. Prepare sweet potatoes: Roast or steam sweet potatoes until soft, then mash until smooth.
  3. Mix wet ingredients: In a bowl, combine mashed sweet potato, almond butter, eggs or flax seeds mixture and vanilla extract. Stir until well incorporated.
  4. Add dry ingredients: Mix in cocoa powder, baking soda, cinnamon (if using), and salt.
  5.  Mix well using cut & fold method.
  6. Bake: Pour the batter into the prepared dish and smooth out the top. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & serve: Let brownies cool before slicing

Notes

  1. Can opt for other flours- oats flour, ragi flour.
  2. For more sweetness, use maple syrup or honey.
  3. Can use chopped nuts instead of choco chips.
