Description
A light, tangy, and refreshing dish made with cooked millets, tempered spices, and fresh lemon juice. This healthier twist on traditional lemon rice is rich in fiber, easy to digest, and perfect for a balanced meal.
Ingredients
- Cooked millet (foxtail/little millet) – 1 cup
- Oil – 1 tsp
- Mustard seeds – ½ tsp
- Urad dal – 1 tsp
- Chana dal – 1 tsp
- Peanuts – 1 tbsp
- Curry leaves – 6–8
- Green chili – 1 (slit)
- Turmeric powder – ¼ tsp
- Lemon juice – 1–1.5 tbsp
- Salt – to taste
- Coriander leaves – 1 tbsp (chopped)
Instructions
- Heat oil in a pan, add mustard seeds and let them splutter.
- Add urad dal, chana dal, and peanuts; sauté until golden.
- Add curry leaves and green chili; sauté briefly.
- Add turmeric and mix well.
- Add cooked millet and salt; mix gently.
- Turn off heat, add lemon juice, and mix well.
- Garnish with coriander leaves and serve warm.
