Description

This delicious chocolate chia pudding is easy to make with only 6 ingredients. It’s thick, naturally sweetened and the perfect healthy make-ahead breakfast or dessert.


Ingredients

Scale
  1. 2 cups milk (dairy or non-dairy like almond, coconut, or oat)
  2. ½ cup chia seeds
  3. ¼ cup unsweetened cocoa powder
  4. 1 tsp date paste or stevia (adjust to taste)
  5. 1 tsp vanilla extract
  6. ¼ tsp salt

Instructions

  1. Mix Ingredients: In a bowl or jar, whisk together the milk, chia seeds, cocoa powder, sweetener, vanilla, and salt until well combined.
  2. Rest & Stir: Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  3. Chill: Cover and refrigerate for at least 2-3 hours or overnight until thick and pudding-like.
  4. Serve: Stir once more before serving.

Notes

  1. You can top the pudding with different ingredients like berries, nuts, chocolate chips.
  2. Along with chia seeds, use of other seeds like pumpkin seeds, sunflower seeds.
  3. Stir multiple times: Before you place your chia pudding in the refrigerator to set up, make sure you give it a good stir! I like to stir initially and then a second time about 5-10 minutes in. This breaks up any clumps of seeds and makes sure all of the seeds aren’t resting on the bottom with the liquid on top!
