These Simple Broccoli Kebabs are a nutritious and delicious snack or appetizer, perfect for anyone looking to enjoy a healthy, low-calorie, high-fiber, and high-protein dish. Made with minimal ingredients, these kebabs are easy to prepare and packed with the goodness of broccoli and carrots, bound together with chickpea flour and oats. They are lightly spiced with cumin and turmeric, providing a subtle yet delightful flavor. These kebabs can be pan-fried or baked, making them a versatile option for any occasion.

Ingredients

Scale

Ingredients:

  • 2 cups broccoli florets, finely chopped
  • 1/2 cup grated carrots
  • 1/2 cup chickpea flour
  • 1/4 cup rolled oats, ground into a coarse powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil spray (for cooking)

Instructions

Instructions:

  1. Prepare the Vegetables:
    • Finely chop the broccoli florets and grate the carrots.
  2. Mix the Ingredients:
    • In a large bowl, combine the chopped broccoli, grated carrots, chickpea flour, ground oats, cumin powder, turmeric powder, salt, and black pepper.
    • Mix everything well until you get a dough-like consistency. If the mixture is too wet, add a bit more ground oats; if too dry, add a little water.
  3. Shape the Kebabs:
    • Take small portions of the mixture and shape them into kebabs or patties.
  4. Cook the Kebabs:
    • Heat a non-stick skillet or grill pan over medium heat and lightly spray with olive oil.
    • Place the kebabs on the pan and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.
    • Alternatively, you can bake them in a preheated oven at 375°F (190°C) for about 15-20 minutes, flipping halfway through.
