Description

Bajra Khichadi is a wholesome, nutrient-packed dish that combines the earthy flavors of broken bajra (pearl millet) with the richness of green split mung dal and a colorful array of vegetables. This comforting one-pot meal is not only delicious but also offers a balanced mix of carbohydrates, protein, fiber, and essential vitamins and minerals, making it a perfect choice for a healthy and satisfying meal.


Ingredients

Ingredient for Bajra Khichadi

  • Bajra Dalia(Broken Bajra) : 100g
  • Green split mung dal: 100g
  • Broccoli florets: 100g
  • Carrot(cubes): 100g
  • Green peas: 50g
  • Potato (small cubes): 100g
  • Cauliflower(florets): 100g
  • Onion finely chopped: 100g
  • Tomato (roughly chopped): 100g
  • Ginger paste: 2 tbsp.
  • Spinach (roughly chopped): 100g
  • Green chili (finely chopped): 1
  • Cumin seeds: 1tsp
  • Dry Red chili: 1
  • Asafetida: a pinch
  • Cardamom(green): 1
  • Clove: 2
  • Roasted cumin seeds powder: 2 tsp
  • Turmeric powder: 2 tsp
  • Salt: to taste
  • Bay leaves: 2
  • Red chili powder: 1tsp
  • Ghee: 1tbsp.
  • Lemon juice: 1tbsp(optional)

Instructions

  1. Heat a Cast Iron Pot or pan.
  2. Dry roast Bajra dalia and Split mung dal till a nice roasted aroma comes out of the pan.
  3. Soak roasted bajra and mung dal with water for about 2 hours.
  4. Heat cast iron pot, Add 1tbsp ghee and heat. Add cumin seeds, Bay leaf, Dry red chili, clove, asafetida powder and give a stir.
  5. Add ginger paste and sauté. Add chopped onions and sauté till they become translucent. Add green chilies.
  6. Add tomato cubes and sauté. Sprinkle salt to taste and stir again.
  7. Add all chopped vegetables and stir well. Add turmeric powder, roasted cumin seeds powder, soaked bajra and mung dal to it and mix well. Add 500ml water and mix well. Adjust salt (if needed).
  8. Cover cook the khichdi on sim. Occasionally stir in between.

Once cooked mix well, pour it in the serving vessel, add lime juice to taste and serve with 1tsp ghee on top.
