Description

Chickpea vegetable stew is a hearty and nutritious dish that combines tender chickpeas with a variety of vegetables, all simmered together in a flavorful broth. This comforting meal is not only rich in plant-based protein and fiber but also offers a delightful blend of textures and tastes.


Ingredients

  • 1/2 tablespoon oil
  • 1/4 medium onion, finely chopped
  • 1/2 carrot, peeled and diced
  • 1/2 celery stalk, diced
  • 3/4 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 cup chickpea (soaked overnight)
  • 1/4 cup diced tomatoes
  • 1.5 cups vegetable broth
  • 1/2 medium potato, peeled and diced
  • 1/4 French beans, diagonal slices
  • Salt and freshly ground black pepper to taste
  • Juice of 1/8 lemon (optional)
  • Fresh curry leaves for garnish

Instructions

  • In a medium pot, heat the oil over medium heat. Add the chopped onion, carrot, French beans and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  • Stir in the minced garlic, ground cumin, ground coriander. Cook for an additional minute until fragrant.
  • Add the rinsed chickpeas and diced tomatoes (with their juices) to the pot. Stir to combine with the sautéed vegetables and spices.
  • Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  • Add the diced potato to the pot. Cover and let the stew simmer for about 25-30 minutes, or until the chickpeas and vegetables are tender.
  • Season the stew with salt and freshly ground black pepper to taste. If desired, add a squeeze of lemon juice to brighten the flavors. Garnish with fresh curry leaves before serving.
