- 2 pitted dates
- 1 tablespoon rolled oats
- 1 tablespoon almond butter (or any nut butter of your choice)
- 1 teaspoon chia seeds
- 1 teaspoon shredded coconut
- 1 teaspoon chopped nuts (almonds, walnuts, or your favorite)
- A drop of vanilla extract
- A tiny pinch of salt
Instructions
Prepare the Dates:
- If the dates are dry, soak them in warm water for about 10 minutes to soften. Drain well before using.
Blend the Ingredients:
- In a small food processor or blender, blend the dates until they form a thick paste.
- Add the almond butter and vanilla extract. Blend until well combined.
- Add the rolled oats, chia seeds, shredded coconut, chopped nuts, and a pinch of sea salt. Pulse until everything is mixed together and forms a sticky dough.
Form the Bites:
- Scoop out small portions of the mixture and roll them into 2 bite-sized balls using your hands. If the mixture is too sticky, you can wet your hands slightly to make rolling easier.
Chill:
- Place the energy bites on a plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up
