These delicious, bite-sized treats are naturally sweetened with dates and packed with wholesome ingredients like rolled oats, almond butter, chia seeds, and shredded coconut. With a touch of vanilla and a mix of your favorite chopped nuts, these energy bites provide a satisfying blend of flavors and textures. Perfect for a quick energy boost, these bites are easy to make and store, making them a convenient snack option for busy lifestyles.


Ingredients

Scale
  • 2 pitted dates
  • 1 tablespoon rolled oats
  • 1 tablespoon almond butter (or any nut butter of your choice)
  • 1 teaspoon chia seeds
  • 1 teaspoon shredded coconut
  • 1 teaspoon chopped nuts (almonds, walnuts, or your favorite)
  • A drop of vanilla extract
  • A tiny pinch of salt

Instructions

Prepare the Dates:

  • If the dates are dry, soak them in warm water for about 10 minutes to soften. Drain well before using.

Blend the Ingredients:

  • In a small food processor or blender, blend the dates until they form a thick paste.
  • Add the almond butter and vanilla extract. Blend until well combined.
  • Add the rolled oats, chia seeds, shredded coconut, chopped nuts, and a pinch of sea salt. Pulse until everything is mixed together and forms a sticky dough.

Form the Bites:

  • Scoop out small portions of the mixture and roll them into 2 bite-sized balls using your hands. If the mixture is too sticky, you can wet your hands slightly to make rolling easier.

Chill:

  • Place the energy bites on a plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up
