Description
A very famous travel special protein rich snack Moong Dal Khakhra from Rajasthani cuisine. An super healthy, quick, easy and tasty snack which require only 2 main ingredients. The good thing is you can store the khakhra for up to 10 days without any refrigeration.
Ingredients

1/2 cup yellow moong dal
1/2 cup whole wheat flour
1/2 tsp coconut oil or olive oil
1 tbsp. chopped coriander leaves
1/2 tsp white sesame seeds
1/2 tsp green chilli ginger paste
Salt as per taste
Pinch of turmeric powder
wheat flour for dusting & rolling
Instructions
- Grind the yellow moong dal coarsely. Then wash and soak it for 3 to 4 hours. Add water same as the quantity of crushed moong dal.
- Now, drain the water completely and transfer to a bowl. Add whole wheat flour, chopped coriander leaves, green chilli & ginger paste, white sesame seeds, salt, turmeric powder and 1/2 teaspoon oil. Mix well. Add water if required to make hard dough.
- Divide the dough into 5 equal roti ball sizes.
- Heat a tawa.
- Take one dough ball and dust it with flour. Roll it to make thin khakhra.
- Roast the khakhra on a low flame. Apply some oil and roast it by pressing it with spatula. Once roasted, take it out. Keep it aside for 10 minutes to cool.
- Repeat the same with remaining dough balls.
- Pack it in air tight container.
Notes
- Grind the moong dal to coarse first before soaking to get that crispy texture.
- Can add variations to flour like use ragi flour, besan, jowar flour, oats flour to dough instead of wheat flour to make it gluten free.
