- 1/2 cup kidney beans, boiled, drained and rinsed
- 1/2 cup chickpeas, boiled drained and rinsed
- 1/2 cup lobia (Black eyed beans) , boiled, drained and rinsed
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh coriander leaves
- 1/2 cucumber chopped
- 1 tsp olive oil
- 1 tsp. cup apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the kidney beans, chickpeas, Kala chana, chopped onion, and coriander leaves.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until well combined.
- Pour the dressing over the bean mixture and toss until everything is evenly coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled and enjoy!
