- 1 cup mashed sweet potato
- ½ cup almond butter or any nut/seed butter
- 2 eggs (or flax eggs for vegan option: 2 tbsp flaxseed meal + 5 tbsp water)
- ¼ cup unsweetened cocoa powder
- ½ tsp baking soda
- ½ tsp vanilla extract
- ½ tsp cinnamon (optional)
- ¼ tsp salt
- 1/4th cup choco chips
Instructions
- Preheat oven to 350°F (175°C). Line a small baking dish (8×8 inch) with parchment paper.
- Prepare sweet potatoes: Roast or steam sweet potatoes until soft, then mash until smooth.
- Mix wet ingredients: In a bowl, combine mashed sweet potato, almond butter, eggs or flax seeds mixture and vanilla extract. Stir until well incorporated.
- Add dry ingredients: Mix in cocoa powder, baking soda, cinnamon (if using), and salt.
- Mix well using cut & fold method.
- Bake: Pour the batter into the prepared dish and smooth out the top. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & serve: Let brownies cool before slicing
Notes
- Can opt for other flours- oats flour, ragi flour.
- For more sweetness, use maple syrup or honey.
- Can use chopped nuts instead of choco chips.
