Description

Palak Tofu Bhurji is a healthy, protein-packed, Indian-style scramble made with crumbled tofu and fresh spinach (palak). It’s a delicious vegan alternative to the classic Paneer Bhurji  perfect for breakfast, lunch, or a light dinner. Spiced with Indian masalas and loaded with fiber, vitamins, and plant protein.


Ingredients

  • Tofu – 200g (firm, crumbled)

  • Spinach (Palak) – 1 cup, finely chopped

  • Onion – 1 medium, finely chopped

  • Tomato – 1 medium, finely chopped

  • Green chili – 1, finely chopped (optional)

  • Ginger-garlic paste – 1 teaspoon

  • Turmeric powder – ¼ teaspoon

  • Red chili powder – ½ teaspoon

  • Coriander powder – 1 teaspoon

  • Garam masala – ½ teaspoon

  • Cumin seeds – ½ teaspoon

  • Oil – 1 tablespoon (preferably cold-pressed)

  • Salt – to taste

  • Fresh coriander leaves – for garnish

  • Lemon juice – ½ tablespoon (optional)


Instructions

  • Pat the tofu dry with a tissue and crumble it using your hands or a fork.
  • Heat oil in a pan. Add cumin seeds. Once they splutter, add chopped onions. Sauté until translucent.

  • Add ginger-garlic paste and green chilies. Cook for 30 seconds. Add chopped tomatoes, turmeric, red chili powder, and coriander powder. Cook until tomatoes soften.

  • Toss in the finely chopped spinach. Cook for 2–3 minutes until it wilts.
  • Add crumbled tofu. Mix well. Cook on medium flame for 4–5 minutes until tofu absorbs the flavors. Sprinkle garam masala and mix.
  • Adjust salt. Garnish with coriander leaves and a squeeze of lemon juice.
  • Enjoy hot with  roti,  bread, or as a high-protein wrap filling!
