Lauki Besan Cutlets Recipe

Ingredients:

  • medium-sized lauki (bottle gourd), grated 1
  • cup besan (gram flour) 1/2 cup
  • small onion, finely chopped 1
  • green chilies, finely chopped (optional) 2-3
  • ginger paste 1/2 tsp
  • cumin seeds 1/2 tsp
  • turmeric powder 1/4 tsp
  • garam masala 1/2 tsp
  • coriander powder 1/2 tsp
  • red chili powder (optional) 1/2 tsp
  • Salt to taste
  • fresh coriander leaves, chopped 2 tbsp
  • ghee or olive oil for shallow frying 1-2 tbsp

  1. Prepare the Lauki:
    • Peel and grate the lauki. Squeeze out the excess water from the grated lauki and set it aside. The water can be reserved for use in soups or to knead dough.
  2. Make the Mixture:
    • In a large mixing bowl, combine the grated lauki, besan, chopped onion, green chilies, ginger paste, cumin seeds, turmeric powder, garam masala, coriander powder, red chili powder, salt, and chopped coriander leaves. Mix everything thoroughly until it forms a cohesive mixture. If the mixture feels too wet, add a little more besan.
  3. Shape the Cutlets:
    • Take small portions of the mixture and shape them into flat, round cutlets or patties. Make sure the cutlets are not too thick to ensure even cooking.
  4. Cook the Cutlets:
    • Heat ghee or olive oil in a non-stick pan over medium heat. Once the oil is hot, place the cutlets in the pan. Cook them on medium heat until they are golden brown and crispy on both sides. This should take about 3-4 minutes per side.
  5. Serve:
    • Once the cutlets are cooked, remove them from the pan and place them on a paper towel to drain any excess oil. Serve hot with mint chutney, yogurt, or ketchup.
