Description
Fox millet pulao is a nutritious and flavorful dish that combines the wholesome goodness of fox millet with a variety of vegetables and aromatic spices.
Ingredients
- Fox millet: 25g
- Whole Spices- Cloves and Bay leaves
- Turmeric: 1 tsp
- Chili powder: 1 tbsp (as per the requirement)
- Garam Masala: 1 tbsp (as per the requirement)
- Mix of seasonal vegetables peas, carrots, beans, cabbage, capsicum diced.: 1 cup
- Curd: 1 tbsp
- Salt: as per the taste
- Oil: 1 tbsp
- Ginger & garlic: 1 tbsp
Instructions
- Soak fox millet in warm water an hour.
- Heat the rice bran oil in a pot. Let it heat up before adding the spices. Add Cumin, Bay leaf and Green Chilies. Once it starts spluttering, add garlic and ginger. Cook for 10-20 seconds.
- Add the Sliced onions, carrots, beans, capsicum and peas, cook for 2-3 minutes. Sprinkle the Garam Masala, Turmeric and add the Yogurt. Mix well.
- Stir the Pot, Add Millets. Add 2 cups of water. Season with salt.
- Cover and cook for 15 minutes on low-medium flame. Garnish with coriander leaves and serve with cucumber raita.
