Description

Tender chicken is cooked with vegetables and herbs in a savory broth, an easy and time saving recipe which is power packed with nutrients!


Ingredients

  • Chicken – 100g
  • Celery- 1 stalk chopped
  • Carrots- 1 diced
  • Tomatoes- 1 diced
  • Onions- 1 diced
  • Yellow bell pepper- 1 diced
  • Peas – 1/2 cup
  • Chicken broth- as per requirement
  • Garlic- 1 tbsp minced
  • Oil – 1tsp
  • Bayleaf- 1
  • Black pepper powder-1 tsp
  • Salt as per taste
  • Coriander leaves – For garnishing

Instructions

  • Cut the chicken into bite sized pieces.
  • Heat oil in a pan, add chicken pieces & sauté it.
  • Add onions & garlic and sauté for more 2-3 minutes.
  • Add in diced carrots, yellow bell pepper, onions, tomatoes, peas, chicken broth, bay leaf, black pepper powder, salt and let it simmer for 5 minutes.
  • Now cover & cook till chicken is done.
  • Garnish it with coriander leaves

Notes

  • You can add other vegetables or ingredients to the stew like pumpkin, sweet potatoes, red & green bell pepper, mushrooms, or corn.
  • You can also use Italian seasoning or any other seasoning as per your taste.
  • Leftovers can be stored in airtight container for up to 4 days. Reheat before serving.
