Chickpea vegetable stew is a hearty and nutritious dish that combines tender chickpeas with a variety of vegetables, all simmered together in a flavorful broth. This comforting meal is not only rich in plant-based protein and fiber but also offers a delightful blend of textures and tastes.

- 1/2 tablespoon oil
- 1/4 medium onion, finely chopped
- 1/2 carrot, peeled and diced
- 1/2 celery stalk, diced
- 3/4 garlic clove, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 cup chickpea (soaked overnight)
- 1/4 cup diced tomatoes
- 1.5 cups vegetable broth
- 1/2 medium potato, peeled and diced
- 1/4 French beans, diagonal slices
- Salt and freshly ground black pepper to taste
- Juice of 1/8 lemon (optional)
- Fresh curry leaves for garnish
Instructions
- In a medium pot, heat the oil over medium heat. Add the chopped onion, carrot, French beans and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the minced garlic, ground cumin, ground coriander. Cook for an additional minute until fragrant.
- Add the rinsed chickpeas and diced tomatoes (with their juices) to the pot. Stir to combine with the sautéed vegetables and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
- Add the diced potato to the pot. Cover and let the stew simmer for about 25-30 minutes, or until the chickpeas and vegetables are tender.
- Season the stew with salt and freshly ground black pepper to taste. If desired, add a squeeze of lemon juice to brighten the flavors. Garnish with fresh curry leaves before serving.
