- 1 cup sprouted fenugreek seeds
- 1 teaspoon peanut oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, peeled and grated
- 1 medium bell peppers, chopped.
- 1/2 cup green beans.
- Salt to taste
- Fresh coriander leaves, chopped (optional)
Instructions
- Heat oil in a pan over medium heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for 1 minute.
- Add grated carrot, chopped bell pepper and green beans. Cook for 4-5 minutes or until the vegetables are tender.
- Add sprouted fenugreek seeds and stir-fry for 2-3 minutes.
- Garnish with chopped fresh coriander leaves, if desired.
